Many of the strongest kitchens sit in the coastal towns while a great many of the sites are inland or at the far end of the corridor, so ask early what the travel charge is and whether it changes the staffing count. Ask what the site actually provides, because a ranch, a private estate or an open field usually has no working kitchen and the build-out belongs in the written quote rather than in a conversation later. This is agricultural country, and a caterer who works it should be able to tell you what is genuinely in season in your month.
