In Charleston: The first conversation with a baker here is about temperature, not flavor. Buttercream and a Lowcountry afternoon do not agree, and a cake that has to stand in a tent for two hours needs a different finish from one going straight to an air-conditioned ballroom — ask what they recommend for your actual setting, and settle who is transporting it and in what. If the reception is outdoors, plan for the cake to arrive late and stay shaded rather than being displayed from the start. Budget $6-12 a slice. Local flavor is worth using: pecan, benne, buttermilk and citrus all read as generous here rather than as novelty, and a dessert table travels through heat better than tiers do.
