Ask any baker you are considering whether they bake for the elevation of the venue or the elevation of their own kitchen, and how a finished cake travels a canyon road in summer heat or winter cold. The come-and-go open house also changes the math: a dessert table feeding a flow of guests is a different order from one plated slice per seat, and at roughly $5 to $12 per slice it is worth pricing both ways before you decide. Outdoors, buttercream in direct mountain sun is a short-lived thing, so ask exactly where the cake will stand, whether that spot holds shade until it is cut, and who moves it if the sun gets there first.
